Mexican Lasagna: Date Added: 17 Aug 2016

1 pkg. Flour Tortillas
1 lb. Ground Beef
1 c. Salsa
1 (15 oz.) can Tomato Sauce
1 pkg. Taco Seasoning Mix
1 (16 oz.) carton Cottage Cheese
2 Eggs
1 tsp. Oregano
1 1/2 c. Shredded Cheddar and Monterey Jack Cheese, mixed.

Cooking Instructions

1. Heat oven to 375 degrees F.
2. Brown meat and drain. Stir in salsa, tomato sauce and taco seasoning. Simmer, stirring frequently for 5 minutes.
3. In separate bowl, combine cottage cheese, eggs and oregano.
4. Line bottom of lightly greased 13"x9" baking dish with half of the tortillas, overlapping edges. Top with half the meat mixture. Spoon cottage cheese mixture over meat.
5. Arrange remaining tortillas over cheese mixture. Spread remaining meat mixture over all and top with shredded cheese. Bake for 30-35 minutes or until bubbly. Let stand 10 minutes before serving. Cut into squares and serve.

P.S. I like to top each serving (on the plate) with shredded lettuce, chopped tomatoes and a little sour cream.
