Mango Salsa: Date Added: 17 Aug 2016

4-6 ripe mangoes (4 if they're really ripe; 6 if they're moderately ripe)
1 large green pepper
1 large red pepper OR 1 small red and one small orange
1 small red onion or 1/2 a large one
1 small jalapeņo (add more or less depending on preference)
1/2 bunch of fresh cilantro, rinsed and patted dry
Juice of 1 small lime
Approx 1.5 tablespoons worth of FRESH crushed garlic
1/3 to 2/3 cup Simply Orange orange juice (not concentrate)
1 can of sweet white corn
1 can of black beans, rinsed and drained
Approx. 1 tsp of black pepper to taste

Cooking Instructions

Dice the following (between TicTac and Altoid size is fine) and place together in a large bowl: - peppers (don't forget to de-seed; leave jalapeņo for LAST and use gloves if you want)
- red onion
- mangoes
Pull/cut off cilantro leaves and discard stems. Chop finely and add to bowl. Drain corn and add. Drain and rinse black beans; add.
Crush garlic; add. Add lime juice, orange juice, and pepper. Mix thoroughly and taste. Add more juice/pepper/whatever to bring taste up to your standards.
NOW de-seed and dice the jalapeno very finely; add, mix thoroughly and immediately wash the cutting board, knife, and your hands.
Let it sit for 4+ hours or overnight to let the flavors marinate. Serve with Tostito Lime Tortilla chips or blue corn chips.
Also great with:
grilled salmon, shrimp, chicken, pork, etc. turkey burgers
fish tacos
anything you can think of!
