Grilled Chicken 'n' Cheese: Date Added: 17 Aug 2016

2 boneless skinless chicken breasts (I use Spartan frozen breasts)
1/2 t each...poultry seasoning, rosemary and thyme
8 slices Rye Bread (Riverside Bakery has great rye choices)
16 slices Swiss Cheese (Riverside Deli will slice thinly for you)
Butter...enough to coat 1 side of 8 slices of bread
Olive oil

Cooking Instructions

1. Grill or pan fry chicken until tender and done. Allow to cool. Pull apart with 2 forks. Season with 1/2 t poultry seasoning, 1/2 t rosemary, 1/2 t thyme and sprinkle lightly with olive oil. Toss to cover all chicken.
2. Butter one side of each of the 8 slices of bread.
3. Assemble sandwiches putting butter side down in preheated skillet...bread, cheese, chicken, cheese and bread (butter side up on this slice)
4. Grill until the bread is nicely toasted. Keep heat low enough to warm the cheese to a smooth and creamy consistency. Medium heat works best.
Makes 4 wonderful sandwiches and paired with a nice bowl of soup or a salad...that might be what's for dinner tonight! Enjoy!
