Blueberry Banana Nut Bread: Date Added: 17 Aug 2016

1 cup sugar
1/2 cup unsalted butter, softened
2 large eggs
1 tsp lemon juice
3 ripe bananas, mashed
1/2 cup chopped pecans (substitute walnuts if desired)
2 cup flour plus 1 tablespoon flour
1 cup fresh blueberries (substitute frozen if desired)
1 tsp baking soda
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt

Cooking Instructions

1. Using an electric mixer, cream sugar and butter until light. Add eggs one at a time. Mix in lemon juice and vanilla. 2. Stir in mashed bananas, but do not beat with electric mixer.
3. Toss blueberries in 1 tablespoon of flour to coat and set aside. Stir baking soda, baking powder and salt into mixture. Fold flour into mixture, stir in coated blueberries (do not user electric mixer), add nuts.
4. Pour into greased and floured 9 x 5 loaf pan or muffin tins with foil baking cups.
5. Bake in 350 degree oven. Bread: 55-60 minutes. Muffins: 35-40 minutes. All ovens vary, so test for doneness using a toothpick inserted into the center of the bread or muffin. Cool bread or muffins prior to eating.
