The Best Gluten Free Chocolate Cake from Scratch!: Date Added: 17 Aug 2016

2 cups Westwind's Gluten Free All Purpose Flour (available at Riverside Market)
1 1/2 cups sugar
1/3 cup cocoa
1 1/2 tsp. baking soda
1 1/2 tsp. xanthan gum (this can be hard to find - we carry it at Westwind Milling Co in Argentine for a good price)
1 1/4 to 1 1/2 cups milk
1/2 cup butter
1 egg
1 tsp. vanilla
(Optional) 1 cup chocolate chips

Cooking Instructions

1. Mix ingredients thoroughly until you get a smooth, not too chunky batter.
2. Pour into 2 greased, 8" rounds, or you can make 12 or more muffins, in a greased muffin pan.
3. Bake in a pre-heated, 350 degree oven for 30-35 minutes (cake), or 20-25 minutes (cupcakes.) Cake is done when toothpick comes clean out of the center.
