Peanut Butter Cocoa Fudge: Date Added: 17 Aug 2016

2 cups sugar
2 cups packed light brown sugar
1 tsp salt
1/2 cup cocoa powder
1 1/3 cups milk
1/4 cup butter
3/4 cup peanut butter (creamy or crunchy)
2 tsp vanilla extract
1 cup chopped pecans

Cooking Instructions

1) Line an 8" x 8" square baking pan with lightly buttered waxed paper or aluminum foil. Set aside.
2) In a large saucepan, stir together the sugars, salt, cocoa powder, and milk, and heat until sugar is dissolved. Add the butter and cook until mixture reaches 238 degrees F on a candy thermometer.
3) Pour mixture out of the pan into a large mixing bowl to cool slightly and, with a wooden spoon, stir in the peanut butter and vanilla.
4) Add pecans and continue beating to cool and stiffen the fudge until it starts to lighten and lose it's glossy sheen.
5) Spread the fudge into the prepared pan. Cool completely. Cut into squares.
